Description
Sweet and warmly spiced, this apple crisp cold brew latte is perfect for the fall season! Chunks of apple are stewed with apple juice, spices, and brown sugar to yield a flavorful syrup. Once the syrup is made, it’s combined with cold brew concentrate and oat milk for a cold brew latte packed with fall flavors reminiscent of apple crisp and apple pie.
Ingredients
for the apple crisp syrup
- 1 firm apple, diced, such as Honeycrisp, Fuji, or Granny Smith
- 1/3 cup brown sugar, packed
- 3 tablespoons water
- 2/3 cup apple juice or cider
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 cinnamon stick, optional
- 2 teaspoons vanilla extract

- 2-3 tablespoons apple crisp syrup
- 1/2 cup cold brew concentrate
- 1/2 cup oat milk
- ice
Instructions
Add all of the ingredients for the apple crisp syrup EXCEPT for the vanilla extract to a small saucepan over medium heat. Bring to a simmer, stirring occasionally. Let the syrup simmer for 10 minutes, stirring every minute or two, then remove it from the heat and allow it to cool for 10-15 minutes. After it has cooled a bit, strain out apple pieces and cinnamon stick from the syrup, pressing the apples gently to extract as much syrup as possible. Stir the vanilla extract into the strained syrup. Keep the apple crisp syrup in a bottle or jar in the fridge and use within a couple of weeks. Shake well before using.
If your syrup has been sitting for longer than a few minutes after the initial straining, shake it well since the spices have a tendency to settle to the bottom. To make an apple crisp cold brew latte, add 2-3 tablespoons of syrup to your glass, followed by the cold brew and oat milk. Stir to combine, then top with ice. Enjoy!
Notes
- You’ll end up with about 3/4 cup (6 ounces) of apple crisp syrup which is enough for 4-6 drinks.
- Don’t throw out the stewed apples after you strain them out of the syrup! You can enjoy them with yogurt, ice cream, oatmeal, or pancakes.
- I like using a cinnamon stick in addition to the ground spices for extra depth of flavor in the syrup but feel to leave it out if you don’t have any on hand.
