Description
These baked apples with oats and chamomile are a cozy and healthy snack or dessert! Baking the apples makes them nice and tender and brings out their natural sweetness. This recipe is naturally gluten free and vegan and can be paired with yogurt or your favorite ice cream.
Ingredients
- 2 granny smith apples, cut in half and cored
- 1/4 cup whole rolled oats
- 1 tablespoon coconut oil, solid at room temperature
- 1/4 teaspoon dried chamomile, ground
- 1/8 teaspoon ground cinnamon
- 1 tablespoon agave syrup or maple syrup
Instructions
Preheat your oven to 375 degrees and lightly grease a baking dish with coconut oil or cooking spray.
Combine the oats, chamomile, and cinnamon in a small bowl. Add the cooconut oil and agave syrup and mash into the oat mixture until everything is sticking together and looks crumbly.
Place the apple halves in your baking dish, cut side up. Put 1/4 of the mixture on top of each of the apple halves, pressing down a bit if needed. Bake for 20 to 25 minutes until the oat topping is golden and the apples are tender.
Serve warm or at room temperature.
Notes
- I used whole dried German chamomile flowers and ground them up with a mortar and pestle. If you can’t find them, a bit of loose chamomile tea will work just as well. Just make sure that chamomile is the only ingredient.
- These are delicious served with a bit of vegan ice cream or yogurt while warm!
- Store leftovers in the fridge. Enjoy cold or reheat in the microwave or oven.
