Description
This summer peach and lemongrass shrub is a bright, vinegar-infused drinking syrup made with juicy peaches, aromatic lemongrass, apple cider vinegar, and honey. A refreshing seasonal shrub, it’s delicious mixed with sparkling water for a simple mocktail or used as a cocktail mixer on hot summer days.
Ingredients
- 1 heaping cup diced peaches, about 2-3 small peaches
- 2-3 stalks of lemongrass, roughly chopped
- 2/3 cup honey
- 1 cup apple cider vinegar
Instructions
Add the lemongrass to a clean quart-sized jar then bruise it with either a muddler or the end of a wooden spoon. Add the peaches and honey then mash with the muddler until the fruit is broken down and very juicy. Pour the vinegar in and give it a stir. Put the lid on the jar and place the shrub in the fridge for 24-48 hours. I like to shake it a couple of times a day just to make sure everything is mingling well. I prefer the flavor after 48 hours but you can taste it after 24 hours to see if you like it.
Strain out any of the fruit solids then discard or compost them. What you have is your shrub! Add a couple of ounces to some sparkling water for an easy mocktail or pair it with your favorite spirits for a cocktail.
Keep leftover shrub in the fridge and use within a month.
Notes
- If you’d like to make your shrub vegan, you can use an equal amount of granulated sugar in place of the honey.
- If you don’t have lemongrass, you can use a handful of lemon balm, mint, or basil.
- You’ll be able to make roughly 6-8 drinks out of the shrub depending on how much you use.
