Frozen cubes of sweet watermelon are blended with lime juice, coconut water, agave nectar, tulsi basil, and a pinch of salt for a refreshing summer slush. This easy frozen drink is a great way to stay cool and hydrated in the summer heat!

It’s been regularly 100+ degrees every day for the past few weeks here which means staying hydrated is a really big priority! I whipped up this slush the other day to combat my boring water routine but still give me some delicious and refreshing summer hydration. It’s super simple to make since everything is simply tossed in a blender. The only thing you have to remember to do ahead of time is to freeze the watermelon! I like to prep a big batch ahead of time so I can make several drinks out of it.

What You Need to Make this Watermelon Lime Slush

  • Watermelon – I prefer a seedless watermelon for this but it’s entirely up to you! You’ll cut up your watermelon and freeze it before using it in the recipe.
  • Lime Juice – the tanginess from the lime complements the sweetness of the watermelon. Plus, it helps with hydration!
  • Agave Nectar – adds a little sweetness but is completely optional and can be left out if you prefer your slush less sweet!
  • Coconut Water – adds the necessary liquid to be able to blend the frozen watermelon into a slushy consistency. It also provides great hydration!
  • Sea Salt – a tiny pinch helps balance all of the flavors while also aiding in hydration.
  • Tulsi Basil – lends a beautiful herbal flavor that complements the watermelon nicely. You can use regular sweet basil if you like or even mint in its place!

How to Make this Watermelon Lime Slush

You’ll start by cutting up your watermelon. I like to cut mine into roughly 1-inch cubes because they freeze and blend faster. You can obviously skip this step if you’ve purchased already cut watermelon! You’ll arrange your cut watermelon in an even layer on a small parchment lined baking sheet, making sure the pieces aren’t touching. Then, you place it in the freezer. Allow it to freeze fully (at least 6 hours) before proceeding with the recipe.

Once you’ve frozen your watermelon, the rest of the recipe goes by in a breeze! You’ll add your frozen watermelon, lime juice, coconut water, agave nectar, sea salt, and tulsi basil to a blender and blend until you have a slushy consistency. Serve and enjoy immediately! The amounts called for in the recipe will make 2 smaller or 1 large slush.

Tips for Recipe Success

  • Make sure your watermelon is completely frozen! If it’s not, it will look more like a thick juice than a slush once it’s blended.
  • Plan on serving and enjoying this as soon as it’s made. It doesn’t stand up well if left to sit around for too long because it starts to melt.
  • To make sure your slush stays nice and frosty, you can put your serving glass in the freezer along with the watermelon!

Description

Frozen cubes of sweet watermelon are blended with lime juice, coconut water, agave nectar, tulsi basil, and a pinch of salt for a refreshing summer slush. This easy frozen drink is a great way to stay cool and hydrated in the summer heat! 


Ingredients

Units Scale
  • 2 cups cubed watermelon, frozen
  • 2 tbsp fresh lime juice
  • 1–2 tbsp agave nectar, optional
  • 3/4 cup coconut water
  • small pinch of sea salt
  • small handful of tulsi basil leaves

Instructions

Add all of the ingredients to a blender. You can omit the agave nectar completely if you prefer. If you’d like it lightly sweetened, use 1 tbsp. If you’d like it really sweet, use 2 tbsp. 

Blend until you have a slushy consistency. Serve immediately and enjoy!

Makes 1 large or 2 small servings. 

Notes

  • To prepare your watermelon for freezing, cut it into roughly 1-inch cubes and place it on a small baking sheet that has been lined with parchment paper. Make sure the pieces aren’t touching. Freeze completely before using in the recipe. 
  • If you don’t have access to tulsi basil, you can use an equal amount of regular basil or mint in its place.

This mojito cold brew cashew milk latte is super refreshing! Cold brew coffee is shaken with fresh mint leaves, agave syrup, and plenty of ice in an homage to the classic mojito. The frothy and minty cold brew is topped with creamy cashew milk for a delicious vegan summer coffee option!

Mint is probably my favorite herb. I know I’ve probably said it here many times, but it’s true! There’s something really comforting to me about its fresh flavor and cooling properties. For this reason, I always have an abundance of it in the garden, especially during the warmer months of the year. I love being able to go out and nibble on a leaf or snip a few sprigs whenever I want. Now that it’s practically summer, I crave the flavor of it almost every day!

This mojito-inspired coffee drink was inspired by a craving for a minty coffee situation last summer. I wanted a super fresh minty flavor rather than the muddled and often toothpaste adjacent one that mint simple syrup can have. So, I used the mojito cocktail as inspiration! Cold brew coffee is shaken with fresh mint leaves, agave syrup, and plenty of ice. During this process, it muddles and breaks down the mint, infusing its flavor into the cold brew. Plus, it makes the cold brew super cold and frothy! Since I always prefer my coffee with a good bit of milk, this mojito cold brew latte is topped with creamy cashew milk. So simple and so incredibly delicious!

  • It takes less than 5 minutes and only 4 ingredients to make, not counting the ice cubes!
  • It’s a super refreshing and delicious coffee option for the summer season.
  • The mint creates a lovely cooling effect (again, perfect for the summer season!).

What You Need to Make this Mojito Cold Brew Latte

You only need 4 simple ingredients to make this drink: fresh mint leaves, agave syrup or simple syrup, cold brew coffee, and cashew milk (or your favorite plant milk). While a traditional mojito has lime juice and rum in the mix, we’re leaving those out. Feel free to use any culinary variety of mint that you like here! I made the version you see in the photographs with some chocolate mint from my garden. I’ve also made it with spearmint and Swiss Ricola mint and it was equally delicious!

Tips for Recipe Success

  • The key is to use fresh mint leaves here, not dried ones. You want the bright minty flavor that is only present in fresh mint leaves. Save those dried mint leaves for a batch of herbal iced tea!
  • It might sound silly, but use a cold brew coffee that you actually like! If I’m going with store-bought, I like Stumptown’s original cold brew. Feel like making your own? Try my cold brew method!
  • I love using my homemade cashew milk here but coconut milk or oat milk would also be great. You can find the recipe for my homemade cashew milk in this short video!
  • Use a mild flavored liquid sweetener like agave syrup or simple syrup. It will blend into the drink much easier than a granular one like sugar.
  • Shake the cold brew, agave syrup, mint, and ice vigorously in a cocktail shaker or mason jar for 30 seconds. This helps muddle and break down the mint, infusing its flavor into the coffee.

  • 1–2 teaspoons agave syrup, or simple syrup (use 1 teaspoon if you prefer it less sweet)
  • 4 ounces cold brew coffee
  • 4 ounces cashew milk
  • ice

Instructions

Add the mint, agave syrup, cold brew, and a large handful of ice cubes to a cocktail shaker or a pint-sized mason jar with a lid. Shake vigorously for 30 seconds then strain into a glass and add the milk. Top with ice and enjoy immediately!
