Perfect for spring and summer sipping, this strawberry grapefruit mocktail with mint is incredibly refreshing and flavorful. Ready in 5 minutes or less with just 5 ingredients, this easy mocktail can be batched to serve a crowd with a few simple modifications or enjoyed solo.

Why I Love This Mocktail Recipe

This easy mocktail is a new favorite because the pairing of strawberries, grapefruit, and mint is super refreshing which makes it perfect for spring and summer sipping! I love the balance of the sweetness from the strawberries, the citrusy notes from the grapefruit, and the cooling herbal notes from the mint. Since the mint in my garden is going absolutely bonkers, I love that I can pop out and pinch a sprig then have this mocktail whipped up in less than 5 minutes!

Notes on Ingredients and Substitutions

While I am really digging the pairing of strawberries and grapefruit, you can try subbing in other berries like blueberries, blackberries, or raspberries for an equally delicious and refreshing non-alcoholic sip. If you don’t like grapefruit, any variety of orange will work here (just use the juice of a whole one in place of the grapefruit half). You can also try this with lime or lemon but you’ll need much less juice, about 1-2 tablespoons worth. As for the mint, I highly recommend leaving it in because it’s so dang refreshing! Fresh Mint Storage Tip — my preferred method for storing mint is to fill a small glass or jar with water, trim off the very bottom of each mint stem, then place the stems in the jar of water just like you would a bouquet of flowers. Keep the jar on the counter away from direct sunlight and change the water every couple of days. It should keep for about a week!

Tips for Achieving the Best Tasting Strawberry Grapefruit Mocktail

  • Muddle the strawberries and mint until the strawberries are super juicy and there aren’t any large chunks remaining. You want to extract as much juice as possible because it adds flavor to the mocktail.
  • Use fresh grapefruit juice if possible, not bottled or pre-squeezed juice! It honestly has the best and freshest flavor and is my preferred choice in a recipe where the juice is one of the main flavor profiles.
  • Sweeten to your tastes. The amount of simple syrup in the recipe is what I tend to prefer but if you’re avoiding added sugars, simply leave the simple syrup out! You’ll still have a super refreshing mocktail.
  • Add just enough club soda or sparkling water to top off the drink once you’ve added the ice, about 2 ounces. You want just a touch of effervescence without watering down the flavors of the mocktail.

Description

Perfect for spring and summer sipping, this strawberry grapefruit mocktail with mint is incredibly refreshing and flavorful. Ready in 5 minutes or less with just 5 ingredients, this easy mocktail can be batched to serve a crowd with a few simple modifications or enjoyed solo.


Ingredients

Units Scale
  • 3 medium strawberries, hulled and diced
  • 1 spring fresh mint, or 4–5 leaves
  • 1 tablespoon simple syrup, or agave syrup
  • ice
  • 1/2 large grapefruit, juiced
  • 2 ounces club soda, or plain sparkling water
  • edible flowers, optional for garnish

Instructions

Add the diced strawberries, mint, and simple syrup to a 12-16 ounce glass. Muddle until the strawberries are juicy and the mint is fragrant.

Add a large handful of ice to the glass, followed by the grapefruit juice. Top with the club soda then garnish with edible flowers or grapefruit slices if desired.

Enjoy immediately!

Notes

  • Agave syrup or honey can be used in place of the simple syrup.
  • Plain sparkling water or seltzer can be used in place of the club soda. I recommend chilling it beforehand so that the ice doesn’t melt as quickly!
  • Don’t have a muddler? Use a wooden spoon instead!
  • To make a pitcher, add 2 cups diced strawberries 6-8 sprigs of fresh mint, and 6-8 tablespoons of simple syrup to a blender or food processor. Pulse a few times until the strawberries are broken down and juicy. Pour this mixture into a pitcher. Juice 4 grapefruits, then add the juice to the pitcher as well. Chill this mixture until you’re ready to serve. Right before serving, stir in 16 ounces chilled club soda. Serve over ice.

  • Fresh Mint – you’ll need 1 sprig of mint which is equivalent to about 8 leaves. The fresh mint forms the foundation of this mocktail giving it a beautiful herbal flavor. If you like to dress up your drinks, make sure to have extra mint leaves on hand for garnish!
  • Freshly Squeezed Lemon Juice – Freshly squeezed lemon juice adds a fresh and tart flavor that pairs nicely with the mint. Save a lemon round or wedge for garnishing if you like!
  • Light Agave Syrup or Simple Syrup – adds a touch of sweetness and helps to muddle the mint leaves.
  • Plain Sparkling Water or Seltzer – adds bubbles and serves as the canvas that carries the mint and lemon flavors.
  • Ice – keeps your mocktail nice and cold! To keep your ice from melting as quickly, use chilled sparkling water/seltzer. You can also chill your glasses in the freezer overnight!

Recommended Tools

How to Make this Lemon Mojito Mocktail

Add the mint and light agave syrup (or simple syrup) to your glass. Gently muddle the mint to help encourage it to release its flavorful oils. Pour the lemon juice over the muddled mint and agave syrup/simple syrup.

Fill the glass about 3/4 full with ice. Then, top with sparkling water or seltzer.

This lemon mojito mocktail is a refreshing non-alcoholic drink that balances sweet, tart, and herbal flavors. Freshly squeezed lemon juice adds a bright and tangy twist to the classic mojito profile. Ingredients

Scale
  • 1 sprig of fresh mint, about 8 leaves
  • 1/2 – 1 tablespoon light agave syrup or simple syrup
  • 2 tablespoons freshly squeezed lemon juice
  • ice
  • sparkling water or seltzer, to top
  • optional garnish: lemon rounds and mint leaves

Instructions

  1. Add the mint and agave syrup (or simple syrup) to your glass. Gently muddle the mint for about 30 seconds until highly fragrant. 
  2. Add the lemon juice to your glass, then fill it with ice and top it with the sparkling water.
  3. Give it a gentle stir then add a garnish of mint leaves and a lemon slice if you like! Enjoy immediately.
