
‘Tis the season for all things pumpkin! Whether you’re new around here, or an OG, you might have noticed that my love of pumpkin is no secret. Now that we’re well into the fall season AND my favorite month, it’s the perfect time to share some of my favorite vegan pumpkin recipes with you! While pumpkin has a natural sweetness that varies depending on variety, it works well in both sweet and savory recipes. You’ll find both below! All of these recipes can be made with canned or homemade pumpkin puree and most are gluten free in addition to being vegan/vegan-friendly.

Pumpkin Polenta with Garlicky Kale and White Beans
