If you’ve ever been disappointed by a certain popular coffee chain’s fall apple drinks, then I HIGHLY recommend trying my apple crisp cold brew latte! The combination of spices and apple in the slowly simmered syrup plus the oat milk in the latte comes as close to an apple crisp as you’re going to get in coffee form. Plus, you’ll spend a lot less on this homemade version AND you can make it as sweet as your taste buds like. Let’s whip up the easy apple crisp syrup so we can enjoy a glass!
Notes on Ingredients and Substitutions

I used a Fuji apple in testing and in the photos but ANY firm textured apple will work like Honeycrisp, Granny Smith, Cosmic Crisp, or Pink Lady. Light or dark brown sugar can be used in addition to coconut sugar if you prefer. Apple juice or apple cider both work great, the fresher the better! If you happen to have apple pie spice on hand, you can use a heaping teaspoon in place of the cinnamon, ginger, and cloves. I love this cold brew latte with oat milk because it gives the drink more of an apple crisp flavor, but feel free to use your favorite milk here!

Tips for Making the Best Apple Crisp Syrup
- Use a firm textured apple (examples listed in the section above). Since the apple simmers in the syrup, you want a firm textured apple that will hold its shape without breaking down and turning into applesauce. This will make it easier to strain the syrup, plus, you get to eat the apple pieces afterwards!
- Add the vanilla AFTER the syrup has simmered. This keeps the flavor from being muddied.
- Use fresh apple juice or cider if possible for the best apple flavor.
- I prefer using a cinnamon stick in addition to the ground spices because it adds more depth of flavor.

Ingredients
for the apple crisp syrup
- 1 firm apple, diced, such as Honeycrisp, Fuji, or Granny Smith
- 1/3 cup brown sugar, packed
- 3 tablespoons water
- 2/3 cup apple juice or cider
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 cinnamon stick, optional
- 2 teaspoons vanilla extract

- 2–3 tablespoons apple crisp syrup
- 1/2 cup cold brew concentrate
- 1/2 cup oat milk
- ice
Instructions
Add all of the ingredients for the apple crisp syrup EXCEPT for the vanilla extract to a small saucepan over medium heat. Bring to a simmer, stirring occasionally. Let the syrup simmer for 10 minutes, stirring every minute or two, then remove it from the heat and allow it to cool for 10-15 minutes. After it has cooled a bit, strain out apple pieces and cinnamon stick from the syrup, pressing the apples gently to extract as much syrup as possible. Stir the vanilla extract into the strained syrup. Keep the apple crisp syrup in a bottle or jar in the fridge and use within a couple of weeks. Shake well before using.
If your syrup has been sitting for longer than a few minutes after the initial straining, shake it well since the spices have a tendency to settle to the bottom. To make an apple crisp cold brew latte, add 2-3 tablespoons of syrup to your glass, followed by the cold brew and oat milk. Stir to combine, then top with ice. Enjoy!
Notes
- You’ll end up with about 3/4 cup (6 ounces) of apple crisp syrup which is enough for 4-6 drinks.
- Don’t throw out the stewed apples after you strain them out of the syrup! You can enjoy them with yogurt, ice cream, oatmeal, or pancakes.
- I like using a cinnamon stick in addition to the ground spices for extra depth of flavor in the syrup but feel to leave it out if you don’t have any on hand.
