A Refreshing Sparkling Blueberry Lime Mocktail to Sip on All Summer Long
I’m always adding to the roster of easy mocktail recipes during the summer because you can only drink so much water before you need a little something special! The unexpected combination of blueberry, lime, and rosemary in this non-alcoholic drink is so incredibly refreshing and absolutely perfect for hot summer days. Add sparkling water to the mix and you’ve got an effervescent drink that will quench your thirst AND look gorgeous while doing it!

Since this blueberry mocktail does involve a homemade simple syrup, you can’t whip the initial drink up super quickly. But, once the syrup is cooled, you can make a glass in just a few minutes and have enough for 7 more drinks! Since the recipe yields plenty of syrup, this summer mocktail can very easily be made in a pitcher for a gathering. Check out the recipe card down below for instructions on making a whole pitcher!
Key Blueberry Mocktail Ingredients

While you can technically use frozen blueberries here, I frequently use fresh because I don’t have to worry about thawing them first. If you want to use frozen, thaw them first, then mash them with the sugar! I’ve used sugar and honey in the simple syrup. The main difference is that the honey will impart a honey flavor while being a little more expensive than sugar. If your budget is on your mind, use sugar.
Just one sprig of fresh rosemary will do so find a friend and snip some from their garden if you can! Freshly squeezed lime juice will yield the freshest flavor. Look for limes that are light green/yellow green, have smooth skin, and have a slight give when you press the skin. These are the ripest and will yield more juice for you!
Make the Blueberry Rosemary Simple Syrup First


The blueberry rosemary simple syrup is going create our main source of flavor for this easy summer mocktail. The great thing is that once you make it, you’ll have enough for about 8 drinks! I prefer to mash the blueberries in the pot with the sugar first before it even touches the heat to extract as much juice as possible. Once the water is added and the syrup comes to a simmer, you can add the rosemary and simmer for just 5 minutes. This thickens the syrup slightly while infusing it with the flavor of the rosemary. Cool it, strain it, then you’re good to go!
Bringing it All Together – Pour and Sip!



Once the syrup has cooled, it’s pretty smooth sailing. Simply add the syrup to your favorite glass, followed by the lime juice, a big handful of ice, and the sparkling water. I like chilling my sparkling water before using it here because it won’t melt the ice as quickly and water down the drink before you’ve had a chance to enjoy it! Enjoy it as-is or go the extra step and garnish with some blueberries, a rosemary sprig, or an edible flower just for fun.

Ingredients
- 1 cup fresh blueberries
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 sprig fresh rosemary, about 6 inches long
- 2 tablespoons lime juice
- ice
- 4–6 ounces sparkling water
Instructions
Make the syrup first. Add the blueberries and the sugar to a small pot. Using a potato masher or a large spoon, mash the blueberries to encourage them to break down and release their juices. This will help the syrup cook quicker while also extracting more juice from the berries.
Add the water to the pot and set it over medium heat. Allow the syrup to come to a simmer, stirring regularly, then add the rosemary. Let the syrup simmer for 5 minutes then remove it from the heat. Allow the syrup to cool to room temperature with the rosemary in it, then strain it through a sieve. Makes about 1 cup syrup. Store extra syrup in the fridge and use it within 1-2 weeks.
To make one drink, add 2 tablespoons of the syrup to a rocks glass followed by the lime juice. Stir, then add a large handful of ice and top with the sparkling water. Enjoy!
I threaded some fresh blueberries onto a cocktail pick for garnish and added a small rosemary sprig and edible flower.
Notes
- If using frozen blueberries, measure out a cup then let them thaw before using them in the recipe.
- You can use an equal amount of honey in the blueberry simple syrup if you prefer.
- The recipe yields about 1 cup of syrup which is enough for about 8 drinks. To make a pitcher, add the cooled syrup and 1 cup lime juice to a pitcher and chill. When ready to serve, top with 32 ounces of chilled sparkling water. Serve over ice.
