If I can be honest, radishes weren’t really a favorite until I started growing them in my garden. Sometimes, I think that growing something yourself makes you appreciate and savor it more! I really love these gorgeously hued watermelon radishes that are more of a fall/winter addition to the garden. Their mild, peppery bite works really well in this simple tartine along with some cream cheese, flaky salt, and chives. Super simple yet incredibly tasty.

Notes on Ingredients and Subs
You can use any radish variety you like here! If you end up with extras from the bunch you buy, I highly recommend using them in this spring panzanella salad, this crispy potato salad, or as a topper for this creamy tortilla soup. Use your favorite bread here and I’ll leave it up to you whether you toast it or not. I usually prefer a slice of toasted sourdough. Depending on your dietary needs, you can use regular or vegan cream cheese here.
My Favorite Pairings
If you want to make these tartines part of a larger brunch or lunch spread, I would definitely go with this blood orange and fennel salad, this roasted carrot soup with crispy lentils, or these shirred eggs with leeks and mushrooms. Or, for a high protein version of this recipe, try these tofu ricotta toasts with radishes!

Ingredients
- 1 thick slice of bread, such as sourdough
- 3–4 tablespoons cream cheese, regular or vegan
- 1 watermelon radish, thinly sliced
- 1–2 teaspoons thinly sliced chives
- flaky sea salt, to taste
Instructions
Toast your bread to your liking.
Spread the cream cheese over the bread then layer on the slices of radish. Sprinkle the chives over the top and season with flaky sea salt.
